Winemaking notes: Every year brings a different vintage, and we work with the grapes to achieve the best results. Pinot Noir is sometimes reluctant to give up colour. To help it along, we will often employ something called ‘saignée’. Shortly after crushing the grapes, we draw off a portion of the juice. That ‘bleed down’, or saignée, becomes the rosé, with the remaining skins now benefiting our exceptional Pinot Noirs with a higher juice/must ratio.
